Just cause I said it doesn't mean that I meant it. People say crazy things.

Tomato Salad!

Ingredients:

Peach vinaigrette dressing


About 2 lb. tomatoes


3 ounces crumbled goat cheese


1/2 cup coarsely chopped toasted pecans


Optional freshly ground pepper

Peach Vinaigrette Dressing:
1/3 cup white balsamic vinegar
1 garlic clove minced
2 tablespoons brown sugar
2 tablespoons olive oil (I reduced it to 1/2 tablespoon)
1/8 teaspoon salt
1 large fresh peach, peeled and diced
2 tablespoons chopped fresh basil

Whisk together balsamic vinegar, minced garlic, brown sugar, olive oil, and salt.
Then stir in diced peach and chopped basil.

This recipe is just a guideline.
When putting it all together, make it to your own taste.
To begin:
Start with however many tomato slices you plan on eating.

Sprinkle the toasted chopped pecans on next.

Follow the pecans with goat (feta) cheese crumbles.

Add as much of the Peach Vinaigrette as you'd like.
Possibly follow with ground pepper.
